What on earth do we do with the leftovers from Christmas? There’s the dog who I’m sure would love the feast, the back of the fridge to become a science experiment or the rubbish bin which seems like such a waste when there’s people in the world without food. Mutti (my mum) recently started her own program on community radio and talked about an easy recipe on Boxing Day for festive leftovers.

Crumble sayo biscuits (by hand) into the bottom of a greased slab pan or quiche dish
Layer your leftovers (veggies, turkey or ham, and anything else you’ve got) on top of the sayos
Add some onion or herbs or sun-dried tomatoes for some extra flavour if you like
Beat 4-6 eggs together with some milk and pour over the top of everything
Sprinkle some grated cheese on top
Bake in a moderate oven for approx. 35 mins
Serve with salad

You can use this recipe with any kind of leftovers and it saves having to make *snigger* pastry. Enjoy!
